This is the boy for the job. Gets up to my 120 psi requirement almost too easily! Have no doubt it will go off the 160 psi scale if required! The beauty of it is, with practice, you can increase the presure by small increments with very little effort. The twin head is very sturdy and needs to be as it can be a mite tricky if you have a Short Presta Valve Stem. On all other valves no problem, its either "on", or you've got it wrong! Was more than I wanted to pay but now I've used it (a lot) it has shown what a waste of money my previous pumps were.
I recommend this product!

Can this pump be used with a ridgeback bike tyres?

Ridgeback make a range of bikes, so you need to state the model. But more importantly, are the tyres Presta or Shrader valves? Read the side wall of the tyre it will tell you the recommended psi. if its in the 20-45 range its probably a Shrader valve if its 70- 130 psi its almost certainly a Presta valve. Joe Blow Pump will fit both of these types of valve! But there are other types of and it does not cater for them all

Will it fit Giant hybrid bicyle expressions
Your bike - Giant hybrid bicyle expressions - should have Kenda 700x40mm tyres on it as original equipment. These are "high presure" tyres with presta valve inner tubes. The Joe blow pump will fit these valves and easily inflate them to, I guess, about 70-80 psi. If you read the sidewall of the tyre it will tell you the recomended presure. But the Joe blow pump is a floor standing pump and not meant to be carried on the bike.
